If you’re looking for a meal that’s as nourishing as it is delicious, this Teriyaki Salmon Sushi Bowl checks the box. Salmon is rich in heart-healthy Omega-3 fatty acids, which support brain function, reduce inflammation, and promote overall cardiovascular health. Pair that with buttery avocado (loaded with vitamins, antioxidants, and healthy monounsaturated fats), protein-packed edamame (for an extra boost of fiber, iron, and plant-based goodness), and you’ve got a powerhouse combo for glowing skin, a happy heart, and steady energy that fuels your body.
Ingredients:
- 1 cup of sushi rice
- 2 tbsp rice vinegar
- 1/2 tsp salt
- 1oz maple syrup
- 1 tsp sesame oil
- 2 tsp gluten free tamari soy sauce
- 2 skinless salmon fillets (cubed)
- 2 tbsp sesame seeds
- Edamame beans
- A ripe avocado (halved)
Instructions:
1. Cook the rice & make the rice dressing
- Cook the sushi rice. While the rice cooks, make the sushi rice dressing: in a small bowl, stir together the rice vinegar, sugar, and salt until fully dissolved.
- Once the rice is ready, pour the dressing over it while still hot. Gently stir to coat and fluff the grains.
2. Prep the salmon & marinade
- Remove the skin from the salmon fillets and cut them into bite-sized chunks. Add the maple syrup, sesame oil, tamari, garlic granules, and sesame seeds to a frying pan and cook over high heat to make the teriyaki marinade. Once it begins to bubble, reduce to a simmer and stir until it thickens into a glaze.
- Turn the heat back up to high, add the salmon chunks, and stir to coat them well. Cook the salmon to your liking.
3. Meanwhile, assemble the bowl base
- Divide the rice between two bowls, covering about two-thirds of each base. Fill the remaining third with edamame beans and sliced avocado.
4. Serve
- Spoon the teriyaki salmon over the rice bowls.
